It is written in grams because it is the most accurate way I’ve found to get quality and consistent results. I strongly encourage using a food scale like this one when baking.

The baking instructions call for a dutch oven. That is what I use and what is largely popular when baking artisan loaves. It is however, not a requirement. Baking can be adjusted in standard loaf pans, an open baking method*, pullman loaf pans and more. Do what you’re comfortable and prepared with!
